I'm applying for a company that wants to use my data to determine my candidacy?

This seems like it should be illegal. It wants to determine sexual orientation, religious/philosophical/political beliefs, race/ethnicity, medical history... and says it may outsource the information to other countries where data protection laws are different. This sounds so illegal.

How the hell do I start protecting my data or limit what the internet can get about me? Do I just need to be on a VPN 24/7!?
